A lovely friend sent me a recipe for gluten free pizzas made out of cauliflower the other day. As my boyfriend loves pizzas, especially since we moved to a house where we have our own stone oven (very normal in Portugal) I am going to try these for him and see if he loves them just as much as the normal white flour pizzas. I made a few adaptions from the original recipe sent & added some of my grannies amazing vegan homemade pesto & here we go :-) let’s see how good they are :-)
For crust:
1/2 head cauliflower, coarsely chopped 1/2 cup shredded (Italian) cheese blend 1/4 cup chopped fresh parsley 1 egg 1 teaspoon chopped garlic salt and ground black pepper to taste
For pesto: Handful fresh parsley Handful fresh basil 2 garlic cloves olive oil roasted pine nuts or hazelnuts
1.Add all the ingredients (except oil) for the pesto into a food processor and slowly add the oil until you have the desired consistency, best not to liquid for the pizzas 2.Grate cauliflower really fine or place in the food processor (watch out you don’t grate to fine!) 3.Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 15 minutes. Transfer cauliflower to a large bowl and refrigerate, stirring occasionally, until cooled, about 15 minutes. 4.Preheat an oven to 230 C. Line a baking sheet with parchment paper. Or light the stone oven a few hours before and get your pizza peel ready (just learned that the long handled tool to get pizzas in & out of oven is called a peel :-)
